Gluten Free Mac and Cheese

Gluten free mac and cheese, add your personal favorite vegetables, red or yellow peppers, chopped broccoli lightly blanched, green onions or just a fast and easy mac cheese recipe for two. If you need meat for a main, slice 1/4″ and dice some chicken cook on the side, to add in at the end.


8 oz. box of gluten free pasta shells
2 ounces soft goat cheese (chevre), crumbled
2-3 ounces aged white Cheddar, grated

Macaroni. Set a large pot of salted water over high heat and a smaller pot unsalted water to blanche your veg. Bring the water to a boil. Add the macaroni. Stir for a minute to make sure it doesn't stick together.
While your shells are boiling, blanche some broccoli in the other pot for a couple minutes depending on how you chopped.
Chopped up goat cheese and grate cheddar.
Turn off heat when the shells are tender but still abit firm, strain the pot leaving a bit of water. Pour about 1/2 cup of the water in a coffee cup.
Mix the cheese in with the shells in the pot add a bit of the water from the coffee cup till you get a smooth consistency. Add your broccoli and voila.
