BBQ Teriyaki Chicken Salad

Description

Tasty teriyaki, with pineapple and cashews and easy to make, bbq or substitute  baking your chicken, if need be.  Serve as a  nice light dinner or lunch fare. Adjust recipe for number of plates, easy.

Ingredients

4 boneless skinless chicken breasts
1/2 cup teriyaki sauce
6 cups mixed salad greens, torn into bite size pieces
2 green onions, cut into 1/2 inch pieces
1 - 8oz can pineapple chunks in juice, drained
1/2 cup spliced cashews
1 tblsp olive oil
1 tblsp butter
4 tsp teriyaki sauce

Directions

Place chicken in shallow dish, pour teriyaki sauce over chicken.

Cover and refrigerate from a few hours to overnight.

Heat up bbq, cook chicken breasts on low with cover down for about 20-25 mins, check to make sure its cooked and adjust to your bbq so you don't burn or over cook it.

Slice chicken into thin strips and set aside.

Mix salad greens, onions and pineapple.

Heat the olive oil and 4 tsp teriyaki sauce; in microwave or small pan, mix, let cool, pour over greens and toss in cashews.

Serve on salad plates, top with cooked sliced chicken.
