Asian Chicken Salad with Chow Mien Noodles

Description

Simple and easy to make, light and tasty, easily adjust this salad recipe for number of plates. Substitute your fave flavour of nuts, almonds, cashews, peanuts would all work 🙂

Ingredients

Dressing
2 tablespoons brown sugar
2-3 tsp of the mandarin orange juice
2 tsps low sodium soy sauce
3-4 teaspoons sesame oil
1⁄4 cup vegetable oil
3 tblsp rice vinegar
Salad
1 small romaine lettuce, torn in pieces
4 cooked boneless skinless chicken breasts sliced and chopped
1 tsp olive oil
1 tsp butter
3 green onions, chopped
1⁄3 cup coarsely grated carrot
2 cups dry chow mein noodles (add more or less)
1⁄3 cup toasted slivered almonds, chopped peanuts or sliced cashews
canned mandarin oranges (drained, keep 2 tsp juice for the dressing)

Directions

Mix your dressing ingredients stir or blend; refrigerate for an hour or so.

In a pan add olive oil, butter and fry your chicken about 20-25 mins over medium heat. Cut to check there is no pink. Slice and dice when cooked.

In a large bowl combine the lettuce with chicken, green onions, dry noodles, carrot and slivered almonds or chopped peanuts; mix to combine.

Pour on the dressing; toss to combine.

Top with mandarin orange segments.

Serve on plates. Voila, mangez bien!
